Complex, fine and alluring bouquet. Aromas of freshly baked goods, stone fruit and citrus. A developed autolysis layers in complexity and distinctiveness. Dry, crisp, refreshing, salivating and tasty wine on the palate. Flavours mirror the nose merged together with a buoyant crisp mousse and plenty of acidity. Made with hand harvested chardonnay grapes from a single vineyard on the Waimea Plains. This sparkling wine was produced using the traditional method, also known as Méthode Champenoise, where the wine undergoes secondary fermentation in the bottle. This vintage spent 24 months on lees before disgorgement.
Medium lemon in colour with a persistent fine bead. Aromas of ripe apple, white fleshed stone fruit and floral notes with a touch of lemon zest are found on the nose. A dry wine with a medium palate weight and flavours of nectarine, crunchy green apple, and warm brioche. The finish has hints of chalky minerality and a soft autolytic character.
